CARAMEL POPCORN

Caramel Popcorn.                

  • Large dish of popped pop corn kernels                   
  • 4 tbsp butter.                          
  • 4 tbsp brown sugar.                
  • 4 tbsp golden syrup.

 

  1. Melt the above in a saucepan stirring occasionally.
  2. Remove from heat once melted.  
  3. Put 1/2 tsp baking powder, mix well.
  4. Pour over the popcorn and mix, making sure all popcorn is mixed into the caramel.    
  5. Line a baking tray with foil n bake in preheated oven on very low for about 2 hrs mixing in between so it doesn't stick.

Simply divine!

FREKADELS

Frekadels                            

  • 1/2 kg washed n drained steak mince
  • 1 tsp salt                        
  • 1 tsp white pepper                        
  • Ground green chillies
  • 2 grated onions                         
  • Little less then 1/2 loaf bread made into crumbs.        
  • Dhanya cut fine.              
  • 1/2 lemon juice.                        
  • 1 tsp ground fresh ginger.        
  • 1 tsp ground garlic.                      

 

  1. Combine all the above ingredients well and form into patties. Can either bake or fry.

SPINACH MUSHROOM AND CHICKEN PIES

Spinach, mushroom and chicken pies

  • 1kg cubed chicken fillet
  • 1 bunch spinach chopped
  • 1 grated onion
  • salt,pepper,lemon pepper
  • green chilles
  • ground garlic
  • 2 circles clover feta cheese n
  • 3/4 cup grated cheddar.

Method:

Braise onion with ghee.
Add chicken n spices n allow 2 cook, add spinach, when all da water
has burnt out, add 1 tub Woolworths double thick cream . Allow 2 cool.
When cool add cheddar n feta cheese.Fry mushrooms in garlic butter
and throw it in once the chicken is cooked.Fill puff pastry as usual. line base with eggs first to avoid a soggy pie.

Corn frittersCORN FRITTERS

  • 1 can sweetcorn kernels
  • 140g cake flour
  • 2 eggs
  • 1/2 cup milk
  • 100g mature Cheddar cheese,grated
  • 2 tbsp Italian parsley,chopped
  • 1 tbsp chives,chopped
  • 1 tsp baking powder

Method:
Mix together the flour,eggs,milk,cheese,herbs,baking powder. Add
the corn and salt 2 taste.
Heat oil 2 deep-fry until hot. It must not be 2 hot,it needs 2 cook
on the inside without burning. Drop spoonfuls of batter into the oil.
Cook until puffed up and golden.
Drain on absorbent paper. Keep warm until ready 2 eat.
Optional: Can add finely chopped green chilli or paprika for a spicier
version.
