GRILLED STEAK WITH ROSEMARY CHILLI GLAZE

Grilled steak with rosemary chilli glaze:

Marinade:

  • 500g rump/ T-Bone steak
  • 100ml butter-melted
  • 3 tsp paprika
  • 3 tsp mediterranean spice
  • 6 tsp garlic n herb spice
  • 2 tsp coarse blk pepper
  • 100ml sweet chillie sauce
  • 3 Tbsp lemon juice
  • Salt to taste
  • Mix together n marinate.
  • Rosemary chilli glaze:
  • 60ml oil
  • 3 tsp fresh rosemary-chopped
  • 3 tsp crushed red chillies
  • 2 tsp mediterranean spice
  • 2 Tbsp sesame seeds
  • 150ml water
  • 100ml brown sugar
  • 4 Tbsp lemon juice
  • Salt to taste

Place steaks on on grill rack.cook in oven @ 180 for 15min,basta wid glaze.turn over n cook for further 10min.baste till steaks r cooked.grill for 5min to brown.

BAKED FISH SURPRISE

Baked Fish Surprise

 

  • 11/2 - 2kg fish of choice
  • 1 onion thickly sliced
  • 1 green pepper sliced
  • 1 tomato sliced in rings
  • thick potato chips
  • 4-6 slices white bread- cubed
  • Lemon juice
  • 125 - 150g butter
  • Green chillies

 

Marinade:

  • 1 - 11/2 tsp salt
  • 2 tsp crushed garlic
  • 1/2 - 3/4 tsp white pepper
  • 2-3 tsp crushed green chillies
  • 1/4 - 1/2 cup lemon juice
  • 3 - 4 Tblspn oil

Mix well, and coat fish in above marinade

 

Method:

 

Place marinated fish in greased pan

Top with whole green chillies.

Place cubed bread.

Arrange potatoes on and around fish.

Top with tomatoes, pepper, and then onion rings.

Sprinkle with lemon juice, and season with salt n pepper

Place pieces of butter over the top.

Cover with foil.

Bake at 180 degrees for 40 -60 min.
